Hoddeok is not jeon, but it's closer to the western idea of a pancake. The NCHFP and GaPOLL surveys both indicated similar percentages using the boiling water canner for processing fruits and tomatoes. Place jars in your boiling water bath canner, being careful that the jars aren't touching each other. Obviously, with Ball/Kerr lids, it is easy enough to test the seal by seeing if the lid flexes (clicks in and out) when the jar is completely thawed again. Steam canners are not recommended because processing times for use with current models have not been adequately researched.

I know plenty of people that think that canning is super expensive and that it is not worth the bother. Actually, the very fact that I don't HAVE to can is probably why I'm finding it so appealing. I serve this jam alongside a wedge of Gorgonzola Dolce cheese and some crusty Italy bread and everyone raves about the flavor combination. Put them into a quart or half gallon mason jar along with a couple of cloves of garlic, a few slices of onion and a grape leaf.
